Info: In contrast to the Hessian Handkäs in Rheinhessen no cider is used for the marinade. If you like, you can add some white wine.

The preparation

Cut the Harz cheese out of the refrigerated shelf into fine, round slices, also the apple. The beetroot can be processed raw or raw. As a dressing, we mix the mild white vinegar from Rheinhessen with some oil, honey, salt and cumin and whole mustard seeds and finely chopped red onion, which we then drizzle over the carpaccio slices. For decoration, spread the cleaned nasturtium on top.

For the celery salad, we rub a quarter celeriac and mix it with a little yoghurt, white wine vinegar, salt and pepper and chopped walnuts.
