Feather white cream

Ingredients for 6-8 people

  • 1 liter of semi-dry Dornfelder red wine
  • 100 g raisins
  • 200 g of sugar
  • 70 g of cornstarch
  • ¼ tsp cinnamon
  • 1 pinch of ground cloves and cilantro
  • 2 egg yolks
  • 2 tablespoons orange liqueur
  • 2 cups of cream à 200 ml

Pour raisins with ¼ liter hot red wine and let them swell overnight.
Stir the cornstarch smooth with a little cold red wine. Boost the rest of the red wine with sugar and spices and stir in the stir-fried cornflour with the whisk. Boil well with stirring, so that the starchy taste overcooked. Then add the raisins.
Now pour the cream into a cold bowl. Mix two egg yolks with the orange liqueur and pour into the warm but no longer hot cream. After cooling, fold in the whipped cream.
