Homemade potato rolls with Rhine-Hessian sausage salad

Potato bread

Ingredients (for about 20 small rolls)

  • 300 g boiled potatoes
  • 1/4 piece of fresh yeast
  • 1 tbsp olive oil
  • 2 teaspoons salt
  • 130 g wholemeal flour
  • 200 g of flour Type 405
  • 120ml potato cooking water


For the yeast dough mix the boiled, cooled potatoes, the potato water, flour and other ingredients and knead into a smooth yeast dough. Then let the dough go for 40 minutes. Form small buns out of the fluffy yeast dough and place on a baking tray lined with baking paper. This then again for 20 min. let go. Preheat oven, the rolls at about 180 degrees for about 12-15 min. to bake. Alternatively, you can of course buy the potato rolls at the bakery.

Rheinhessian sausage salad


  • Half ring meat sausage
  • small glass of cornichons
  • 350 g of green beans
  • 1 red onion
  • 1 hand cheese
  • 1 tuber beetroot
  • 4 tablespoons of red vinegar
  • 4 tablespoons olive oil
  • 1 tsp of mustard seeds
  • 1 tsp caraway
  • Cooking oil for frying
  • salt
  • pepper


First wash the green beans, clean and halve and cook until firm. Quench with ice water to keep the green nice. Then cut the green beans into small pieces.
Remove the meat sausage from the skin and cut into small pins or strips. Likewise the cornichons and the onions. Dice the Handkäs or cut into pens. Season with the spices. The mustard seeds can be mortared or sprinkled as whole grains, they are softened in the dressing and bring in some sharpness.
Peel the tuber for the beetroot chips and then cut thin slices with a sharp knife or a grater. Fry this oil in 160 ° C for about 1 minute until crisp. Then place on kitchen paper and salt a little.
