Mainzer Spundekäs

This cheese is the ideal basis for a wine tasting. Formerly shaped like a bung by a wine barrel, it got its name. As a dessert or snack, it is best enjoyed with a harsh Rheinhessen wine.

Ingredients:

  • 1 onion
  • 1/8 l of sour cream
  • 2 tablespoons butter
  • 1 teaspoon of paprika
  • ½ pound of quark
  • salt

Preparation:

Cut a peeled onion into small cubes, then stir well with 1/8 l sour cream, 2 tablespoons butter and the paprika powder. Mix ½ pound of cottage cheese with salt, season with salt and "mix" the mixture until a light cream has formed. Sponge cheese looks tender, but it tastes hearty. The turned on "soft cheese" becomes a treat if it can be left for 30 minutes at room temperature. There are no limits to your imagination when it comes to making cheese and there are many ways to vary it, even if it's all cheese. This also fits perfectly fresh, hot "Schquellte" or crispy farmhouse bread.
