Quark mousse crepes with apple sorbet and caramel apples

This brings the food: thinly baked crepes with creamy-airy filling: creamy mouthfeel, gentle and slightly sweet, with a crisp nutcracker with strong caramel notes and a fine, refreshing acidity from the apple sorbet.

That's what the wine needs: light sweetness with toasted notes (like caramel or nut); fragrant, warm-spicy notes of ripe apricot and baked apple; finesse, well-integrated acidity to give the dish freshness, and a fine, silky texture that can match the creamy fullness of the dessert. So here at least selection quality is required.
