Rheinhessen pumpkin casserole with savoy cabbage chips

For the pumpkin casserole:

  • 600g potatoes
  • 2 bars of spring onion
  • 400g of white beans
  • 3 tomatoes

  • 1 Hokkaido pumpkin
  • 1TL mustard
  • 4EL Parmesan
  • 2EL olive oil
  • 1 handful of rosemary
  • 2 tablespoons Rheinhessen white wine jelly
  • sea-salt
  • pepper

For the savoy chips:

  • 8 savoy cabbage leaves
  • 4EL olive oil
  • 1EL soy sauce
  • 2EL Parmesan
  • chopped cashews
  • Juice of a 1/4 lemon
  • Paprika spice
  • sea-salt
  • pepper

preparation

First wash the savoy cabbage neatly for the savoy cabbage chips. Then you cut out the stalk like a V, because it does not really taste. If you have torn the leaves into bite-sized pieces, you can now mix them in a bowl with the other ingredients. Then you put the leaves on a baking sheet and distributed them properly. There should be no leaves on top of each other. Then you give the baking sheet for 40 minutes at 130 ° in the oven. The chips should not all be too dark!

For the casserole: First you grab the potatoes and peel them all first. Then you can cut these into cubes and slices. In a bowl, mix the potatoes with a little olive oil, a little salt and 2 t of Parmesan cheese. Set the bowl aside and wash the Hokkaido properly. Now you "behead" him and hollow out the pumpkin. Now you give the juice of lime in the Hokkaido and add some salt and pepper. In the preheated oven, you can first bake the pumpkin at 170 degrees for 15 minutes.

Now you can strain the beans and drain. In the meantime, you can cut the spring onions into small cubes and cut the tomatoes into slices. In a large bowl you mix now tomatoes, white beans, mustard, chopped rosemary, white wine jelly, as well as salt and pepper. Put the potatoes in the pan with the onions and roast everything until golden brown. Then the whole thing comes into the big bowl. Mix everything again and taste the whole thing with salt.

Once the pumpkin has been in the oven for 15 minutes, you bring it out and fill it with the potato mass. At the end, give it a good deal of Parmesan on the pumpkin and give it for another 35 minutes at 180 degrees in the oven.

Then you can enjoy the pumpkin with some savoy cabbage chips.
