Riesling Cheese Soup

ingredients for 4 persons

  • 1 onion
  • 1 clove of garlic
  • 1 stick of leek
  • 2 carrots
  • 2 potatoes
  • 30 g butter
  • 1 liter of chicken broth
  • 1/8 l of Riesling
  • 1/8 l cream
  • 50 g of grated Emmentaler cheese
  • Salt pepper

Peel and dice the onion; clean, wash and cut the leek into rings; Peel carrots and potatoes and dice; squeeze the garlic clove.
Sweat the vegetables in the butter, add the broth and cook for about 20 minutes; Then puree the soup with the cutting stick, stir in the Riesling and the cream. Season the soup with salt and pepper and serve with grated cheese.
