Silvaner herb noodles with asparagus tips and jambon de mayence

Silvaner to Pasta fits perfectly - so why not combine it? With the Silvaner herb noodles from the series "Ideas from wine" you can cook a delicious dish for asparagus time.

ingredients

  • 1 Pckg. Silvaner-herb noodles
  • 1 bunch of green asparagus
  • 100 g Jambon de Mayence
  • 2 dried, pickled tomatoes
  • Fresh oregano
  • Possibly. grated Rigatino


preparation
Blanch green asparagus tips in boiling salted water for 1 minute, remove with a sieve trowel and chill directly in a bowl of cold water and ice cubes. In the boiling asparagus water, cook the Silvaner-herb noodles until firm. Sauté the asparagus tips briefly in butterfat while the noodles drip off. Cut the smoked, spicy Mainz traditional ham into broad strips and stir in the noodles with some butter flakes. Turn them into a nest using a meat fork and place in a pasta dish. Garnish with finely chopped strips of pickled tomatoes, asparagus tips and fresh oregano
