Burrata Pesto Sandwich with Peach and Grapeseed Oil

Quick to prepare and ideal for convivial gatherings where you also like to enjoy a glass of wine – and nowadays, that’s even possible without alcohol. But you don’t have to miss out on the familiar wine taste.

Ingredients for 2 servings
For the peach

  • 1 peach (ripe but not too soft)
  • 1 tbsp butter
  • 1 tsp honey
  • 1 pinch chili flakes (optional)

For the sandwich

  • 2 thick large slices of sourdough bread
  • 2 tsp (herb) pesto
  • 1 tomato
  • 2 balls of burrata (100 g drained weight)
  • 4 tsp grapeseed oil
  • 6 basil leaves (optional)

Preparation:
Wash the peach and cut into 8–10 wedges. Melt the butter in a non-stick pan. Add the peach wedges, drizzle with honey, and lightly sprinkle with chili flakes. Fry for 3–5 minutes on each side until caramelised and lightly browned. Remove from the pan.
Toast the bread slices in the remaining butter in the pan for 3 minutes on each side until crisp.

Spread with pesto. Slice the tomato thinly and place on top. Tear the burrata over the bread. Arrange the peach wedges decoratively on top. Drizzle the peaches and burrata with grapeseed oil. Enjoy fresh.

Optionally sprinkle with torn basil leaves.
