Whip the cream until stiff. Grate the marzipan using the coarse side of a grater. Place it together with the egg yolks and eggs in a bowl over a water bath. Gently heat and whisk until the marzipan dissolves and the mixture becomes smooth and creamy. Remove from the heat.
Soak the gelatin in cold water, squeeze out, and dissolve it in the warm mixture. Fold in 3 tablespoons of the whipped cream.
Crumble the Amarettini coarsely. Layer them in a glass, followed by the mousse. Chill the mousse for 2 hours.
Finally, gently spread the apricot jam on top of the cream. Finely chop the dark chocolate and sprinkle the flakes over the jam. Optionally, decorate with a small dollop of the remaining whipped cream. Serve fresh.
