Our family-owned winery, in the style of a franconian courtyard, is located in the middle of Guntersblum. The Saalwächter Winery belongs to Ingelheim like the Imperial Palace and Pinot Noir. As early as 1853, Paul Christian Saalwächter laid the foundation for today's winery as mayor. Then as now, we are particularly enthusiastic about the Burgundy varieties from the lime-rich Ingelheim sites as well as our counterpart from the slate slopes in Assmannshausen. The winery has been practising organic viticulture since 1978. The Schmitt family was one of the first winegrowers in Germany to take the concept of sustainability seriously and completely abandon the use of synthetic chemical fertilisers and sprays. They were co-founders of ECOVIN, the Federal Association of Organic Viticulture. The vaulted cellar dating back to 1865 is spanned by two stone arches. The logo of our winery shows them as a symbol of our winemaking tradition.
