Blanc de noir

Blanc de noir translates from French to "white from black". These are red grapes that are processed like white grapes, making a white wine. The explanation for this is that the juice, just as well as the pulp of most grape berries is white, no matter the skin's colour, as the colour of the berry sits in the berry's skin. If the juice is separated from the skins before fermentation, white wine is obtained.

Blind tasting

In order to judge a wine objectively, it is tasted "blindly". The bottles are either wrapped or made unrecognizable, so that one cannot tell from the bottle, which wine they are tasting.

"Böckser"

"Böckser" is the German expression for a sulphurous wine default. The wine gets an unpleasant aroma, which can smell like rotten eggs or get a goat-like smell. Hence the name "Böckser" derived from "Bock", the German expression for a male goat. The defect can develop as a result of improper production or improper storage and is more common in young wines.

Botrytis

Mouldy fungus (Botrytis cinerea). It makes the berry skin of ripe grapes permeable, it spreads and it consumes relatively little sugar, but acid. This shifts the ratio in favour of the sugar. Due to evaporation of water through the rotten skin, a significant concentration of the juice occurs. The noble rot, that is caused by botrytis, is needed in order to produce wines like Auslese, Beerenauslese and Trockenbeerenauslese.

"Bremser"

Rheinhessen expression for the cloudy, fermenting grape must as a precursor of Federweiss er . It tastes sweet and is very healthy thanks to its vitamins. It also purifies the blood and promotes physical detoxification. The Bremser's time is one of the most beautiful times during the wine year. It's highlight used to be the "Bremsermusik". The Bremser does not "brake", on the contrary. His name is rather due to the noise of incipient fermentation.

"Bundesweinprämierung"

Only wines that have previously been successful in the "Amtliche Prüfung" and in a regional award can take part in the "Bundesweinprämierung". It is the only award on a federal level, that is given out, and it is given by the DLG. The wines are tasted by experts in a blind tasting panel. The wines can achieve a Bronze, Silver or Golden DLG price, depending on the score. The wines with the highest score are tasted once again in an additional exam, the winners receive top award "Goldener Preis Extra".

Bütt

"Bütt"

Made of staves, oval, upwards cylindrical as a transport container for grapes. In the vineyard, it was carried on a little harvesting cart. The "Butt" carrirs, carrying the "Butt" (German xpression for "hod"), then dumped the grapes they were transporting into the transportation hod, the Bütt. The name comes from lat. Butina. The "Narrenbütt", where speaches are carried out during Rheinhessen Fassenacht  is originated here.

Abundance of aromas, that one experiences when tasting a wine. A distinction is made between grape, fermentation, storage and ageing aromas, but also the grape variety plays an important role. Grape varieties with a particularly prominent bouquet are called bouquet types ("Bukettsorten"). These are not limited to the new varieties and can also be traditional grape varieties.
